About Polaris
The blue flying-saucer dome on top of the Hyatt Regency has been part of the Downtown skyline for decades, and inside, the floor still turns, carrying a ring of window tables past the Peachtree towers and out toward Midtown in a slow loop. The menu is Southern-leaning American: steak Oscar, sea bass, pork belly, charcuterie boards and fried oysters, with a blue-dome dessert that echoes the building and honey from bees kept on the hotel roof. A retro peach daiquiri is the signature pour. Open Wednesday to Saturday from 5pm, and to midnight at the weekend, it books up for birthdays and date nights, and parties of six or more arrange tables by email. Google rates it 4.5 across more than 1,100 reviews, though a recent complaint cited an over-salted fish and a very quiet midweek room.
